Ingredients are adapted from the link above but I use my own method on how I usually make bread to make this recipe. All credits go to the original recipe writer.

Notes : Tried making this recipe using sponge method, tried twice and failed twice. Only works with straight method. I assume it is due to the high sugar content, making the yeast becomes overly active when being left fermented on long hours.

Ingredients and spices that need to be Prepare to make Sweet Milk Bun:

  1. 150 g whole milk 全脂牛奶
  2. 20 g condensed milk 炼乳
  3. 3/4 tsp instant dry yeast 即发干酵母 (I used about 5 g of yeast)
  4. 225 g bread flour 高筋面粉
  5. 25 g top/cake flour 低筋面粉
  6. 40 g fine sugar 细糖 (I used granulated sugar)
  7. 25 g beaten egg 蛋液
  8. 1/4 tsp salt 盐 (I omit the salt)
  9. 30 g unsalted butter 无盐奶油
  10. Some flour for sprinkling on bread top (I replaced it with egg wash)

Steps to make Sweet Milk Bun

  1. Combine all ingredients and knead until smooth. If dough is too sticky, sprinkle some flour. Then roll into a ball and let it sit to proof for about 40 minutes.
  2. After 40 minutes, flatten the dough and divide into 9 equal portions. Roll each portion into a ball and let them sit to proof for about 20 minutes.
  3. Flatten each portion and roll into a bowl. Arrange the rolled dough on a greased pan. Let it sit in a warm place fir 40-60 minutes.
  4. Preheat oven to 180 degree Celcius. Bake for 12-15 minutes
