Ingredients and spices that need to be Take to make Bermudian Rum Cake:

  1. Cake:
  2. 1/2 cup milk
  3. 1/2 cup orange juice (lotsa pulp style is best in my opinion)
  4. 1/2 cup vegetable oil
  5. 4 eggs, lightly beaten (or thoroughly thrashed if you are having a baad day - hint - try the rum!)
  6. 1 Tbsp grated orange zest
  7. 1/2 cup dark rum (as noted, Goslings is best)
  8. 2 cups flour
  9. 1/2 tsp salt
  10. 3 tsp baking powder
  11. 1 1/2 cup sugar
  12. 1 package (3 3/4 oz) Jello instant vanilla pudding mix (try others, just has to be the instant just add milk type)
  13. 1 cup chopped pecans (optional)
  14. Glaze:
  15. 1 stick (1/2 cup) unsalted butter
  16. 1 cup sugar
  17. 1/2 cup dark rum

Steps to make Bermudian Rum Cake

  1. Preheat oven to 325°
  2. Mix milk, orange juice, oil, eggs, orange zest, rum, and set aside
  3. In separate bowl sift flour, salt and baking powder.
  4. Mix in sugar and pudding mix to the dry ingredients
  5. Make a well in center of dry ingredients and add milk and oj mixture, mix well.
  6. (Optionally) Sprinkle chopped pecans in a greased and floured 10 inch bundt pan and pour cake mixture evenly over top of the nuts.
  7. Bake for 1 hour at 325°
  8. Remove from oven, cool for 10 minutes.
  9. Prepare glaze (below)
  10. Invert on plate, prick with a toothpick then spread glaze evenly over top. Do this in stages so that the cake has time to absorb all the glaze.
  11. I like to use an injector and inject the glaze inside and around the cake to form pockets of happiness.
  12. GLAZE:
  13. Melt butter in saucepan
  14. Once butter is melted add sugar and bring to a boil. Stir constantly for 5 minutes.
  15. Remove from heat and add rum - note, there will be sputtering and splashing so be careful. Also, keep stirring or your sugar will crystalize and form a lumpy glaze.
