- Use an electric mixer to beat on low speed for 2-3 minutes until whitish. Add the beaten egg in 3 parts and beat on low speed each time until smooth.
- Add ground almonds and use a spatula to mix until smooth while crushing lumps. Sift the cake flour and baking powder over the mixture, and fold it.
- Fold it until large lumps begin to form. Add oatmeal, chocolate chips, raisins, and chopped walnuts. Fold until you don’t see flour left.
- Use your hands to roll the dough into 3 cm / 1.2 inches balls (20g or 0.7 oz each) and press lightly to flatten. Arrange them on a baking sheet lined with parchment paper, keeping space (around 2 cm / 0.8-inch) between each other.
