You want it to be a little firm so the crab cakes won't fall apart while frying. Form mixture into balls and let set in the refrigerator for at least 30 mins.
  3. Add the remaining bread crumbs to a plate. Set aside. Pour oil in skillet and set range eye to medium heat. Roll each crabmeat ball in the breadcrumbs. Make sure they're coated evenly.
  4. Place crabmeat ball in between your hands and press lightly enough to form patties. Add to skillet. Cook patties on each side for about 6 minutes or so or until golden brown on each side.
  5. Drain on paper towels
  6. Serve with a salad and remoulade
